The Bertazzoni rangetop flame failure device — sometimes called an FFD or thermocouple safety valve — is the built-in safeguard on PROR304, PROR366, and PROR486 Professional Series rangetops that automatically cuts the gas supply if a burner flame is accidentally extinguished. Understanding how it works, and periodically confirming it responds correctly, is a straightforward way to maintain kitchen safety.

Why this matters

If a boilover, strong draft, or accidental knock extinguishes a burner flame, unburned gas will continue to flow if the FFD has failed or is slow to respond. Even a brief period of open gas release in an enclosed kitchen can reach concentrations that are dangerous. Warning signs

  • After releasing the burner knob, the flame extinguishes within two to three seconds rather than staying lit (the thermocouple may not be generating sufficient voltage)
  • You must hold the knob depressed unusually long — more than ten seconds — before the burner stays lit
  • A burner relights on its own after being extinguished (suggests FFD is not closing fully)
  • Visible carbon fouling or discoloration on the thermocouple probe adjacent to the burner crown

Inspection schedule

Test each burner’s flame failure device every twelve months, or any time a burner has been heavily soiled by a boilover and subsequently cleaned. After any professional service that involves removing burner caps or crowns, re-test each FFD before returning the rangetop to regular use.

What to do

  1. Light one burner using the standard procedure, then allow the flame to stabilize for thirty seconds.
  2. Without touching the knob, extinguish the flame by blowing it out or covering it briefly with a damp cloth. Begin timing immediately.
  3. The gas flow should stop — confirmed by no audible hiss — within ten to fifteen seconds. If gas continues after twenty seconds, the FFD requires service.
  4. Repeat this test on each burner. Record any burner that fails the cut-off timing test.

When to call a technician
